Moon Cheese Quesadillas
Part of my faire for Moon Day. The holes are made to look like the craters of the moon!
Ingredients
- Large flour tortillas
- Shredded cheddar cheese
- Shredded Mozarella or Monterey Jack cheese
- Your choice of fillings
- Taco seasoning (or your choice of seasoning)
Method
- Mix your shredded cheeses together, and prepare your fillings if you have any.
- Take a tortilla and, with a small circular cookie cutter, punch holes into one side of it.
- Place the tortilla on a griddle or skillet on medium high heat, with a little neutral oil.
- Season your tortilla, then on one the side without holes, put down a layer of your cheeses, then your fillings, then another layer of cheese.
- Fold the tortilla in half, and cook for 1-2 minutes on each side, or till the cheese is sufficiently melted and the tortillas are lightly browned.
- Remove your quesadilla from the heat, and allow to cool slightly.
- Once you're able to touch the quesadilla, cut it into quarters from the middle, like a slice of pizza.
- Serve with salsa, guacamole, sour cream, refried beans, or your choice of sauces!
Tips
- If you're putting a meat filling for your quesadillas, make sure to cook it thoroughly before putting it in - especially if you're working with chicken!
- To prevent your quesadilla from leaking fillings and cheese on the hole-side once flipped, place some baking paper on top of the tortilla before flipping.
- Make sure not to overfill your tortilla, as it might make them difficult to close!
- You can use the offcut holes of the tortilla to make little versions for Eclipse Tortilla Chips!
