Moon Rocks (Rice Krispy Treat)

Rice Kripsy Treats are the perfect sweet for Moon Day! Here's how you can shape them for some extra fun and theming!

Ingredients

  • 9 cups Puffed Rice Cereal
  • 3/4 cup Unsalted Butter or vegan alternative
  • 600g white marshmallows
  • 1/2 teaspoon vanilla extract
  • Pinch of Salt

Method

  • Line a baking tray with baking paper, and lightly grease.
  • In a large pot, melt your butter, and once fully melted, add your marshmallows and stir until the marhmallows are completely melted.
  • Remove the marshmallow mix from the heat and quickly stir in your vanilla extract and salt. Then fold in your cereal, making sure to coat each grain.
  • Wait for the mixture to cook just enough that you can touch it.
  • With lightly oiled hands (as to prevent the marshmallow from sticking to 'em), take a handful of the marshmallow mix, and gently form into a rough round shape. Place onto the baking tray once you are happy with how they look.
  • Allow the treats to set for at least an hour, and up to 1 day.
  • Remove the treats from the baking paper with a spatula.
  • Serve!

Tips

  • You can make a chocolate variety of Moon Rocks by using chocolate puffed rice cereal instead of regular rice cereal, and mixing a teaspoon of cocoa powder or hot chocolate mix into the marshmallows once they're melted, along with the other ingredients.
  • I've heard some people mix pop rocks into their treats, which could be super fun to eat!
  • Make sure the treats are covered while they're setting, especially if you're planning on leaving the house.
  • To store any leftover treats, place them in an airtight container with baking paper between layers if you need to stack them. They can be stored at room temperature for up to 3 days.
