Meatloaf
My take on meatloaf. Don't worry, no raisin here! I recommend serving alongside stir-fried veggies, and mashed potato (or my Butterspice Rice recipe)!
Ingredients
- 500 grams (1 pound) ground beef
- 1 packet Onion Soup mix (or small amount of vegetable stock with onion powder)
- 1 large egg
- Ketchup (1/4 cup)
- Water (1/4 cup)
- Cornflake or panko crumbs
- Curry Powder
Method
- Preheat oven to 170 C (330 F).
- Mix egg, soup mix/veggie stock and curry powder together, and add to the defrosted ground beef. Mix well.
- Add ketchup and water, mix.
- Add bread crumbs slowly, until you get a dough-like consistency. If the mix gets too dry, add a little more ketchup and water.
- Press into a casserole dish, and dust the top with curry powder and any remaining spices and soup mix.
- Cook for 1 hour. Once done, let it rest for 10 minutes.
- Slice and serve!
Tips
- The higher the fat content of your meat, the better it will bind together. If you're using a leaner kind of meat or a vegan/vegetarian substitute, use an extra egg so everything binds in the same way.
