Thai Half-moon salad
Another Moon Day recipe. A refreshing salad with a spicy and savory dressing!
Ingredients
- Salad
- 2 cucumbers
- 1 carrot
- 1/2 Capsicum
- Mixed leaf lettuce
- 1 cup Thai Basil leaves or Coriander/cilantro leaves
- Dressing
- 1 large garlic clove, minced
- 1/2 tbsp grated ginger
- 1 tbsp Worschstershire Sauce
- 1 tbsp Thai Curry Paste
- 2 tbsp Honey
- Finely chopped Jalapenos, or some Sriracha to taste
- 1/2 teaspoon sesame oil
Method
- Mix all dressing ingredients together until incorperated
- Slice cucumbers and carrots into half-moon shapes
- Dice your capsicum and finely chop your basil/cilantro
- Mix and toss salad ingredients until combined
- Serve your salad dressed, or leave your dressing to the side.
Tips
- If you want to be extra fancy about it, you can slice your cucumbers and carrots into star shapes or crescents!
- Thai curry can be pretty spicy. If you don't have much of a spice tolerance, I recommend you use green curry paste instead of red.
- Consider adding other kinds of crisp veggies or fruit to your salad! Some that might work are apples, sweet onions, or pears. You could also add Morning Glory leaves for an authentic thai ingredient!
